is there a possibility to add a Pedal and a key release sound to each key depending on pedal pressed (key release obviously always) . Trying to find out how well this porject could make a realistic grand piano for my kawai master piano.

You might try the samplerbox fork on homspace.nl/samplerbox/
It supports pedals and some other features making the piano more realistic. There is a learning curve to make full use of these though. Help available on the dedicated forum on that site as well.
Key release sound is possible, if the sample set contains these sounds as well.
